Healthy Vegetables, Healthy Heart

Sometimes when I read an article, I get hit like a brick with deja-vu. Haven't we seen this article dozens of times over the decades?

A recent article in HealthDay News shows that eating lots of veggies reduces coronary heart disease and hardening of the arteries. Aparently, even though we have heard this often in the past, no one has actually done an official experiement.

So, with food and funding from General Mills, 100 mice were put to work for 16 weeks eating Green Giant frozen vegetables.

Future research will require a more detailed study. For example, the chemical mechanisms responsible are not yet known, and with human subjects, veggy eaters are typically more active, exercise, and do other things good for health.
